Recipe: Paul's Shepherd's Pie
All right, I'd never made anthing resembling shepherd's pie before, and this isn't particularly traditional.

To start with, instead of mashed potatoes, I used some cubed potatos from a frozen bag of hash browns I'd cooked up at breakfast time. Beyond that, I looked at anuber of different recipes to get some ideas, and this is what I wound up with.

Paul's Shepherd's Pie

1 tablespoon olive oil
1 green pepper 1/4" dice
1 medium onion 1/4" dice
1 lb ground beef
* 1 teaspoon Montreal Steak Seasoning
1 can condensed Tomato Soup
1 can Kernel Corn - drained
1 can Green Peas - drained
approx. 2/3 bag frozen hashed brown (cubed potato style) cooked in advance
1 cup shredded Cheddar Cheese

Heat the oil in a skillet, add the peppers and onions, cook until start to turn translucent, add the ground beef and steak seasoning and cook until ground beef is fully cooked. Add the soup, corn, and peas and mix it well. Put in a 9x13 baking dish, top with the potatos, back at 350 for 20 minutes, sprinkle with cheese and back another 10 minutes.

I really enjoyed it, as did my wife. It is definately something I'll probably make again.

* I used between 1 and 1 1/2 teaspoons, but since I didn't actually measure it, do it to your, and your family's taste.

Ooo, sounds tasty. I'm a believer in Montreal Steak Seasoning.

When I first heard of Montreal Steak seasoning, I was living in an area where I could never find it, so I had some folks I know from the old GEnie network who would mail it to me. I'm so glad it is easier to find now.

When I was making this, I was thinking the ratio of meat to potatoes was wrong. I'm a meat and potatoes guy, and the vegetables outweighed the meat, but when I actually tasted it....mmmmm. We let my wife's granddaddy and his wife have some of the leftovers, and they called and said they'd enjoyed it as well.

As I said, definitely something we'll try again.
